No cooking required! Cold and sweet, this watermelon salad is the perfect refreshment in the summer weather.
This might be one of the easiest Ive featured yet and it doesn't required any cooking AT ALL! This summer has been really humid in California, which means we've been trying to come up with clever ways to avoid turning on the stove or oven. This watermelon salad is a really good side dish to grilled chicken or steak or even as a light lunch.
10.5 ounces cherry tomato, halved
1 small watermelon, cut into cubes
4 ounces feta cheese
~12 Basil leaves
Cut the tomatoes in half and place in a large bowl.
Dice the watermelon, removing the rind. Mix with tomatoes.
Sprinkle the feta cheese over the tomato and watermelon.
Stack about 12 basil leaves and cut them into think slices. Add them to the bowl.
Drizzle olive oil and balsamic vinegar over the salad. Add salt and pepper to taste.
Mix well and eat!
*This salad is best eaten right away. It does not not keep well overnight.
