Featuring Gorgonzola and Pears, this recipe is so creamy and sweet, you are guaranteed to love it. This recipe has been in rotation in my mom's home for years. It comes from an advertisement for STAR Olive Oil in an old issue of Sunset magazine. The page is torn out, folded, wrinkled, and yellowed from the years, but the recipe is still fresh. Of course, the ad wants you to use their olive oil and red wine vinegar but any brand is OK. If you dont feel like cooking the chicken breast, substitute canned chicken. We always use more pear, just because they're so good and the perfect compliment to the chicken salad.

STAR Gorgonzola, Chicken & Pear Salad
1/3 cup olive oil
3 tablespoons Red Wine Vinegar
3 tablespoons honey dijon mustard
Salt and Pepper
3 cups diced, cooked chicken breast
1/2 cup walnut
1/2 cup crumbled gorgonzola cheese
2 pears, halved, cored and sliced
Mixed salad greens, or your preferred lettuce
1. In a bowl, whisk together olive oil, vinegar, mustard, salt and pepper, to taste. Add, chicken, walnuts, and cheese, toss lightly.
2. Place greens on individual plates. Arrange sliced pears in fan shape along one side on top of greens.
3. With slotted spoon, divide chicken mixture equally among plates. Drizzle any dressing remaining in bowl over pears and greens.
